What kind of food can I pack in my husband’s lunch bucket?

He works evening/night shift and has no access to refrigerators or microwaves. He runs a dozer for a local mining company and normally eats “lunch” around 1 am. He is not a fan of sandwiches but will eat them in a pinch. He has heart problems and is on different meds for that – plus the high cholesterol. I am running out of things to put in his lunch bucket for him. He will eat leftovers but that gets old. I am trying to find something that is nutritious but filling. He is normally not picky but after his heart trouble he is not big on spicy foods. He still eats fried foods but I try to avoid those when possible. I have tried different chicken recipes but those get old after a while. He is a big meat eater so he always wants meat in his lunch. He does not eat when he gets home (around 6 am) and goes straight to bed. He gets up around 2, eats whatever I fix and then doesn’t eat again until his “lunch” time. Any ideals on what I can put in his bucket?
